We will be overnighting at CDG, flying to LHR in September and are looking for hotel recommendations.
Any of the hotels on the airport will be fine. There are a number which only vary by budget, which you did not state. The Sheraton is in terminal 2, the rest are along the free rail line CDGVAL.

I haven't stayed there personally, but my bestie stayed at The Sheraton in CDG and said it was great.
I've stated at the Sheraton in Terminal 2 at CDG several times the night before catching our return home flight. It is excellent and the rooms are sound proofed so we never heard the jets coming and going. It is so easy to walk out of the hotel and 100 ft away is the check in desk and security gates. This takes the stress out of getting up and getting a taxi or train to the airport.
I'm arriving at CDG in a few weeks and have a quick question on this Terminal 2 Sheraton hotel. Is it located after security / gates - and after retrieving checked luggage - or is it "airside" inside the secure area? I'm arriving early morning and thinking of a room here to rest, shower / clean-up and then head out a bit later. But that only works if is after security and we have our luggage with us.

We stayed at the Ibis Styles - great and nice buffet breakfast.
It’s probably more ‘budget’ than the Sheraton, but what you would expect for an airport hotel. We paid $137 euro for one night, and $152 for a last minute booking for another night.
Easy to get to the T2 terminals via the shuttle train CDGVAL. The train is free. Ibis Styles is at Terminal 3. The restaurants across the street at Ibis CDG (a different hotel) are nice - good buffet at La Terrasse. And if you want to splurge, the car at the Pullman Hotel (also adjacent) is a fun place to go and people watch and get yourself an expensive gin+tonic.
The Sheraton is probably more upscale and right in the airport proper.

We like the Novotel at Roissy-pol -- convenient to the RER B into Paris and also to the intra airport rail to the terminals. Quiet, decent breakfast and less expensive. We also once stayed at the Hilton and disliked it; the worst meal we have eaten in Europe served rudely and very expensive. (you can kinda live with crappy food that is cheap or good food that is expensive but this was dried out just awful food and expensive. -- many years ago, but we would never go back)
All the hotels along the CDGVAL line are right in the airport proper. The CDGVAL line runs from terminal 1 to terminal 2. A number of hotels are at Roissypôle which is next to terminal 3 on the CDGVAL line and one of the two RER B stops at the airport.
There are plenty of hotel options and none is more than 10 minutes from check in.
I've stayed twice at the Hilton and it's fine, it's one of those huge exposed atrium in the middle jobs. Figure out a way through credit cards to get Hilton Honors and you'll get a free upgrade, deals on food, free happy hour, business center, etc. It's a 5 minute walk to the shuttle which takes you directly to your terminal. And from certain rooms you can look out on a Concorde impaled on a pylon for eternity.
There're quite a few hotels walking distance from the CDGVAL station near terminal 3; you can ride CDGVAL to 2E. This Google Maps link is for one of these hotels called citizenM Paris CDG Airport:
