Recommendation in southern France, Avignon, Carcassonne, etc

I'm planning on going to Avignon in June 2025 for a few days (or more if needed). I think I want to go to Carcassonne, too. Do you think a day trip to Carcassonne from Avignon is good enough (Are there many places to visit there)? What other areas do you recommend in southern France? I love anything Medieval. I also would love to attend Catholic Mass (even daily Mass). Could you give me some recommendations? Thank you.

Carcassone as a day trip from Avignon seems too rushed to me. It is about 135 miles, and almost 3 hours each way by train. However, it is possible. If you can, an overnight stay is nice. If you go, be sure and have a cassoulet for lunch or dinner.

p.s. To find where to attend mass, go to masstimes.org and enter the city you want. Parishes will be listed, and probably websites as well (although typically in French only). Click on different parishes for their info. As to which church is nearest your lodging in any particular town or city, your host should be able to tell you that.
