Recommendation for Standout Meal near Arles/surrounding area?

We are going on our honeymoon in Paris and Provence next fall (last week of Sept/1st of Oct). We'll be staying near Arles for 3 nights with a car. We're hoping to explore the area in those days and eat mostly on-the-go/as we explore towns. But we'd like to plan one at least one special meal- my fiance has always wanted to do a Michelin star restaurant experience. What do you recommend? Should we try a place that has a lot of courses and set menu for the evening? Should we do lunch or dinner? Is there one in particular that you recommend for quality of experience and food?

(My fiance has worked in many restaurants and bars, so he has an appreciation for food and flavor pairings, but I would also say he is a picky eater!! I can't decide if it's better to just dive all in with a full several course tasting experience and just eat whatever is put in front of us or if he'd prefer to order a specific entree that he "knows" he'd like ("meat and potatoes" kind of guy). For example, he doesn't like cilantro, scallops, chocolate, and so on. But he loves strange pairings and subtle flavors like noticing tarragon in a salad or bacon blackberry pancakes. I'm thinking we should just go for the deep dive of the full experience, but any thoughts on that?)
