I arrive on Sat at CDG and I am going to Versailles and then back to Paris the next afternoon. So my question is, if I buy the Navigo pass on Sat can I use it and then reload it on Monday for the next week I am there?

So there is not much point in buying it on Saturday when you arrive. For one thing, I am not sure you can even buy it on a Saturday for the existing week. If you buy it on a Saturday, its validity will begin after midnight that night. So if you are going to Versailles from CDG, it will cost you about 14 EUR. Why spend 22.80 EUR for a Navigo. Buy it for the following week for your return to Paris and the rest of your time there.

The Navigo is good for Monday - Sunday. If you load it on a Saturday it will not be valid until 12:00 a.m. on Monday.

Any fare loaded on a Friday, Saturday, or Sunday becomes usable the following Monday and not before.

You could load it with a one day pass which I think costs about 17 Euro and you could use that from CDG to Paris and then to Versailles and back to Paris THAT DAY. If you will be using it the following week it is probably worth doing because the one day ND unlike the one day 5 zone Mobilis is good for the airport.. It would not however cover your return trip to Paris the next day, Sunday. So it is probably slightly more expensive than buying a ticket from CDG to Versailles which I would guess would cost about 13 or so Euro (just a guess based on the 10.30 fare to Paris and 3.50 fare to Versailles from Paris)). You would break even on that day pass if coming back to Paris that day but not staying overnight. Any weekly pass you load on Saturday would be good starting Monday.
You can also load the equivalent of a Mobilis day pass on the Navigo so if you planned on using the pass a lot on Sunday you could load it again. Probably better off with just a point to point ticket from Versailles to Paris and then ordinary metro/bus tickets for Paris that day.
to be clear, you can load the Navigo Decouverte for the current week through Thursday; from Friday on any weekly charge will be for the following week.
