We land at CDG and plan to take the Metro/RER to our hotel in the Latin Quarter. We plan to take the RER to Versailles a few days later. We also want to purchase a carnet (or two). Can we purchase all of the tickets at once when we buy our ticket at CDG?

You would be better off purchasing Navigo Decouverte Cards for your stay . If an ND fits your dates, it would be the thing to get and charge for a week. If not then you can certainly buy your tickets to the city (10 Euro) a carnet of Paris metro/bus tickets 14.50 for later use and also your Versailles tickets about 3.5 each way. If you will be using individual tickets like this because your dates don't work for the ND, then go ahead and buy them all at once for convenient. They never expire -- I have used 10 year old tickets.
