Is there a website, equivalent to the UK's Traveline.info , for planning public transit in France? I would like to be able to explore both train and bus/coach options for heading from Paris down to Barcelona.

There is a website called Rome2Rio that will give you many options of how to get from point A to point B.
Within Paris:
Long distance buses are often affiliated with www.eurolines.com. France's fast TGV train travels direct from Paris to Barcelona in 6.5 hours; book soon for a better price if you want that train. Flying can be cheaper, though I think that's not your preference; www.skyscanner.com.

Yes, I prefer slow travel, especially modes that let me stop en route for a few hours or even overnight to explore places that are not my key destinations (such as St. Malo en route to Paris). I can allocate 2-3 days for getting from Paris to Barcelona.
There are few long-distance bus services within France as government policy is to encourage rail travel for domestic journeys.
The TGV route to Barcelona affords some interesting stop offs, but of course you would need to make separate reservations. Paris => Lyon => Avignon/Montpellier => Figueres/Girona => Barcelona
Paris-Barcelona now has a direct, high-speed train. http://en.voyages-sncf.com/en/
This is reserved-seat, certainly not hop-on hop-off.
