Provence village ideas as region base for 1 week

I am planning on going to Provence for a week in late May. I'm looking for suggestions for a small to medium sized village that could serve as a central base for day trips around region. Not a tourist trap but hopefully a town/village with a few restaurants and a local market (even if one day a week). I will probably book a vrbo or gite and have a car. My goal for trip is just to explore villages, drive along part of coast, eat good cheese, and visit a vineyard or two.

Our last Provence stay was a gite in Saint-Rémy-de-Provence. You’d be about 20 miles from the coast, and it’s ideal for the market/cheese/proximity to other villages goals. In addition to the town itself, you’re just down the road from Les Baux, the Glanum ancient Roman ruins, and where Van Gogh stayed for treatment for his depression, which can be visited - nice garden out back.
