Hello, We have been to both locations many times. I feel the best advise is to follow the Rick Steves guide books. We use them for every trip, stayed at the recommended accommodations and followed his advise on what to see and visit, you cannot go wrong. Make reservations NOW August is filling up.
I too used Rick's advice for my Provence trip. He has a separate book for Provence and it's quite helpful. I stayed in Roussillon and then went to St. Remy. I think that Arles would be nice. I spent one night in Aix too due to car trouble. I would suggest picking a base and traveling out from there with day trips. Have you read Peter Mayle's books? As the poster above and Peter point out, August is a very busy month and you need to book hotels right now.
