Provence Itinerary

Hello, my husband and I are spending 5 nights in St. Remy the second week of September (3 total weeks in France) and are seeking input on towns to visit. We are more interested in outdoor sights and activities (fewer historical ruins) and quaint towns but not so much museums and art. We appreciate your thoughts on specific sites at each.

Day 1 - driving from Annecy, stop in Orange? and then Avignon; lodge in St. Remy--we're fine arriving in the evening. This isn't much time--just go to Avignon?
Day 2 - Choosing two:? Gourdes, L’Isle-sur-la-Sorgue (great kayaking? would this be similar to Dordogne River, which we will do the next week?), Roussion, pr Luberon
Day 3 - Cotes du Rhone Wine Road--we aren't well versed in wine but would like to visit a few. I've seen Vaison-la-Romaine mentioned several times--which others? RS mentions Seguret, Mourchon, Crestet, Montmirail, Cassan, Coyeux, Gigondas. Do they all close from 12-2 so we eat lunch during that time? We would then spend the rest of the afternoon or evening (slowly, ha) strolling St. Remy.
Day 4 - Arles (Wed market day) and Les Baux
Day 5 - Pont du Gard and Uzes --OR-- Nimes

I've heard so much about Aix-en-Provence--should we substitute one of the above for Aix?

I have two suggestions that were great for us in summer 2022: 1. look into books and/or blogs by Keith Van Sickle about St Remy and the area https://keithvansickle.com/ Keith has lots of insight as to how to best spend your time and many practical tips (including the "secret" St Remy parking lot) and 2. consider to get a guided wine tour with Olivier Hickman https://www.wine-uncovered.com/ Olivier is also recommended in RS Provence book I believe and we enjoyed two great days with him in Cote de Rhone.

Definitely canoe under the Pont du Gard with Canoe Collias ! One of the highlights of our trip in this region!
