Are we better to stay in St Remy or another central location for traveling to other villages?
If you don't have a car and are averse to taking buses you should not stay in St. Remy. Try Nimes, Avignon or Aix en Provence as they all have train stations. You need a car to explore the other small villages like Les Baux, Gordes, Roussillon. But you can buy a escorted full or half day tour of those villages.
Or Arles. But Avignon might be the best choice of base for side trips by public transportation--though it definitely depends on which places you want to see.
I hope you will have a car. Provence is really a great place to drive. If you have a car St Remy is awesome but I would prefer Avignon. Nimes would be a great choice (although technically not in Provence)
