We are in Saint Remy now for three days and we have a car. Where should we go? Cassis, Mont Ventoux, Roussillon, Gordes? I’ve been to the area but my mom and brother have never been outside of Paris. Looks like weather will be 60 and sunny or so. Thanks in advance.

Mont Ventoux is "meh" in my opinion and it will be cold up there. It is an impressive viewpoint but most of the time, the views are hazy because of the sheer height of the mountain vs. the surrounding plains. Also, there are some ugly buildings at the top.
Cassis is a longish drive, not sure it is worth it in your limited time.
I would choose the Luberon, Gordes and Roussillon can be combined! And Joucas is worth a quick stop between the two (20 minutes will do).
