We are going to France at the end of July. We have heard the French Riviera is a must see place, but I also hear it will be wall to wall with people. We will be in Provence and it looks on a map like a day trip to Saint-Maxime would work, but I wanted your opinions. We have a 6 and 9 year old and would just go to the beach and eat seafood.

Most people (including me) use "Provence" to describe the region around the Rhone valley delta that includes Arles, Avignon, and Nimes, plus the Sorgue valley, plus the Luberon hills.
If that is what you mean to then I would not advise a day trip from there to St Maxime under any circumstances, let alone with 2 kinds and in July.
Check out some closer seacoast, such as Cassis or the Camargue.
The drive is about 2 1/2 hours and that is without running into traffic. We are staying in Noves 5 nights and then driving to St. Maxine for 4 nights. Cassis would be your best bet for a day trip! Enjoy!
