Pastry schools in Paris?

My 16 year old daughter speaks fluent French, and for 8 years has wanted to be a pastry chef for a living. I thought a nice Graduation gift from high school (2021) would be to send her to Paris (or some other part of France) for a week or two to attend a pastry school. That's got to look good on a resume for an 18 year old.

Has anyone here done that, or have any knowledge of what we should be looking for? I was hoping to not get into the "tourist schools" that only teach in English, but I'm not sure if the French Schools take short term students

They also have intensive professional Patisserie certificate couses in the summer for one month patisserie certificat
