A friend is taking his wife to Paris for 20th anniversary. She is vegan, looking for upscale vegan for their anniversary dinner. I cross posted under restaurants, posting here to widen the search. Thank you in advance. I did get a great link on the restaurant page.

Whenever this comes up, there's a standard caution that in many countries even when they say vegetarian or vegan, meat broth can be involved somewhere in the cooking process.

You may be very sure that Alain Passard does not use meat anything in his vegan dishes.

Étude, in the 16th (1 Michelin star), does a lovely vegan tasting menu but the website is unclear, you have to enquire by phone.
Still fancy but cheaper, I had a great vegetarian tasting menu last year at Dessance in the 3rd, and they can do vegan on request (it wouldn't have changed much).

not necessarily vegan, but at least vegetarian...
here are Paris by Mouth's recommendations (mostly reliable, altho C thinks she leans towards "Americanized" restaurants)

We really enjoyed Didon in the 6th for vegan and traditional dishes. Read about it here months ago.
