We are traveling with a friend who unfortunately has some serious dietary retrictions due to health issues. Any vegan gluten free suggestions in Paris? I realize that's a tall order in the land of yummy cheese and baguettes. On the plus side buckwheat crepes are naturally gluten free! We are staying near Luxembourg Gardens but obviously can move around via public transport for something delicious.
You can always get an omelette - with ham and/or cheese - you don't have eat the bread that comes with it.

You should eat salades - and vegetables whenever possible.
You should not try the salade dressing which comes with it - try the oil and vinegar.
The correct term is "vegan" or "vegetalienne" if you are female.
I do not have specific restaurant suggestions for vegan and gluten free dishes. Unfortunately you will find that the term vegan is not understood in France (see previous suggestion to order an omelette). Your friend will have to be very specific in her requests. Perhaps stick to vegetables and fruits. I am a sympathetic vegetarian. Good luck!
The French word for vegan is "végane" (and also "végétalien" (looks like the very similar "végétarien")). Closest option to the Jardin de Luxembourg that's not just a "we have vegan stuff on the menu" would be at 53 Rue Mouffetard. Vegan Folie's in the Latin Quarter. It's a patisserie, so mainly sweets, but there should be sandwich options.
Gluten free is "sans gluten" (without gluten). For that, head to GluFree on 39 Rue du Cherche-Midi in the heart of the St Germain Quarter. Their stuff is gluten and (mostly) lactose free.
Oh, and if you see the word "traiteur", they're not saying it's for traitors. That's the French word for caterer!
...of course, those are just two suggestions. The vegan community has already done the legwork for you. Holy moley, there's even a vegan burger place! Hot Vog (a vegan hot dog place) is near the Luxembourg Gardens too.

They will need to ask about the galette/buckwheat crepes. I am vegan (altho not GF) and the places I have asked they were not.
I carry a printed out card from the Toronto Vegetarian Society for the vegan explanation but as mentioned, sometimes veggies will come with butter on them even after using the translation card.

I've eaten at Vegan Folies, the vegan place listed above. If you are in the neighborhood it's fine, otherwise, I'd not make a trip to eat there. They do have a few sandwiches available altho just a couple of small tables. I got mine to take away and ate in a nearby park. It was adequate but not the best sandwich I've had in Paris by a long shot. I do not know if they had GF bread options or GF sweets.
For sweets, Amorino gelato stands are my go-to. They have wonderful sorbetto and usually have signs on the ones that are vegan. The selections vary from store to store but the best selection is their kiosk at the Orangerie end of the Tuileries garden. I do not know if they are GF.
Definitely look at the suggestions on www.happycow.net for places to eat but often I will just start looking at the menus posted in the neighborhood where I am hungry and am able to find something that will work.

Take a look at Thank You, My Deer, La Grenier de Notre Dame, Abbatoir Vegetal in the 18th. Rue Saint Maur in 11th and the 10th near Canal Saint Martin are good areas to look for vegan or gluten free food.

Joy, I am GF not vegan and I have been ok with my printed GF card I found on the web. Another poster suggests a vegan card. I now have a list of places that are only gf or have good selections. On my first visits I just used Google to search. I just searched on Le Fooding for vegan and there were several results but you would need to look at each for GF also.
There are several shops if you want snacks or groceries like Naturalia, that have several locations or Bio coop; I know there are others. You could get picnic supplies there easily.
