Trying to figure out best way to do this. We are thinking that we would take the train to Dijon and rent a car but on Saturday it appears that the car rentals are not open. We could rent a car at the airport and drive to Beaune as well if there isn’t a better option.
We will be returning to Paris to fly home and plan to return bar at the airport.
You can get a train from Dijon to Beaune- it's quite easy and it only takes about 20 minutes.

Are you sure that car rentals are not open on Saturdays in Dijon? Asking because I have rented from the Sixt Car Rental at the Dijon train station and that location was open in the morning and closed for lunch for about an hour and then open until 5 PM. I would not drive from CDG (assuming that is the airport you mean) if you are heading into the drive after a trans-oceanic flight.
