A night cruise on the Seine when the lights of the city are on is really a neat thing to do and is much better than taking one during the day. We've taken several cruises with different companies and Les Vedettes du Pont-Neuf is, in our opinion, the best. Just a possibility to consider.
I've done Fat Tire Bike tours with my guys when they were 17. The night tour is a lot of fun, the guides are informative and funny, and includes a boat cruise on the Seine with the lights of Paris shining. Highly recommend!
Great street entertainers in front of Notre Dame at night, and behind Notre Dame on the pedestrian bridge leading to Ile St Louis, day and night.

The Louvre and d'Orsay are open evenings -- W and F for Louvre and Th for Musee d'Orsay.
The Marais (4th), Latin Quarter (5th) and St Germain (6th) are especially fun to walk around in at night.
