St Eustache has a sung Mass at 11am on Sundays, usually with choir unless they are on holidays. That is the church where Mozart had his mother's funeral. Also has organ recitals on Sunday afternoons.

I don’t know what your budget is, but here are the websites of some excellent choral ensembles for which you'll have to book tickets in advance.

First, the calendar on the website of the French Radio (Radio France), filtered (in the second line of the pull-down menu, Formation, for performances of the Youth Choir (Maîtrise), but you can also filter for “Choeur de Radio France” which is the professional adult chorus.

Two other fantastic choral ensembles, mostly performing Baroque music with instruments, who often perform in Paris (Auditorium du Louvre) or Versailles (it's pretty easy to get to Versailles with the RER train from Paris).
