Which museums, Chateau, and parks might be open on May 1?
I have the book The Museums of Paris and I think there are 345 of them. Since you can probably only see so many in a day I would definitely just check out their website and to be absolutely sure write them since you have time.
You need to check specific sites. May 1 is definitely a day when some close - it's the equivalent of Dec 25 and Jan 1.

You have to check websites. Most museums and chateaux will be closed that day. The ET, the Seine cruises and Jacquemart Andre are open I think. Assume everything is closed. Even Vaux le Victomte which is open 'every day' in season is closed May 1. Parks are open in the day time on holidays and close at dusk as is usual.
Note that metro entrances along the May 1 union march will be closed.
I noticed that some countries are choosing May 7th for their union days this year because of the proximity to Easter.
In other years, yes, Musee Jacquemart-Andree is open and has been a dependable venue for May 1. Unfortunately this year they are still closed for refurb and are not set to open until Sept 2024.

The Louvre is closed as is the Musee d'Orsay, the Orangerie and the Carnavalet.

This is only the case in countries like Greece where they observe Orthodox Easter. For the vast majority of Europe including France, Easter is this weekend.
