My wife and I are looking for hotel recommendations for our one week stay in Paris in May. We are interested in hotels within walking distance to Notre Dame, the Louvre and a Metro Station.

It is really late to book something in central Paris. A good choice would be Henri IV Rive Gauche located just across the river from NOtre Dame and around the corner from transport and from Shakespeare and Co but it is likely booked up. Your best bet now is to use a hotel booking engine and see what is available and then maybe ask for advice here. always book directly with the hotel.

What is your nightly budget?
Look at Hotel Odeon Saint Germain. Pay attention to room sizes, because some are tiny. 15 minute walk to the Louvre or Notre Dame.

Citadines St. Germain de Pres is in walking distance of all those places. I stayed there for a week in 2022. It also has a kitchenette, which was nice.

I stayed in Hotel Jeanne de Arc in the Marais. I found it very convenient. It was very close to Notre Dame and the Metro. The Louvre was perhaps a 30-40 minute walk. There was a small plaza behind the hotel with benches and several restaurants (I ate in two of them while staying there). The hotel had a decent buffet breakfast too. I would stay there again. It's not fancy (considered 3 star) but quite adequate for me. The Picasso museum was also very close.
