We'll be in Paris for 2 nights in late July. We've been to Paris before, but we're looking for a nice hotel. We are open to any neighborhood and prefer a hotel with a bit of history/flair. Breakfast included a bonus.
I've stayed at Hotel Le Bristol and loved it. It was also featured in the Woody Allen movie "Midnight in Paris." They have a high tea that is to die for.

Hotel Muguet in the 7th.
10 minutes walk to the Invalides. 20 to the Eiffel Tower
25 minutes walk to Museum D’ Orsay,
Try the Hotel de l'Empereur, 2 Rue Chevert in the 7th, breakfast included in the price. It's across the street from Napoleon's Tomb, and walking distance to Rue Cler (5 min) and the Eiffel Tower (15 min). Closest metro is La Tour-Marbourg. This hotel was recommended by another traveler on the RS website. We've stayed there 4 or 5 times. Very nice.
We’ve always been happy with Hotel Relais Bosquet in the 7th A. We like that location close to rue Cler, Eiffel and metro. Sometimes they have a discount or free breakfast on their website.
Suggestions from Le Bristol to le Muguet, you really need to offer some budget window guidance.
What is your budget? In Paris, "Nice hotels with a bit of history" can exceed $400-500/night without even going for the most famous ones!
Also, do not focus on whether breakfast is included or not. It is very rarely included in France, and when it is, it just means that the room rate takes it into account!
I usually don’t consider 1-star hotels, but the Hotel Esmeralda around the corner from the Shakespeare and Co. bookstore has a location that can’t be beat. Some of the rooms even overlook Notre Dame. We discovered it because it’s mentioned in a children’s book, “Linnea Goes To Monet’s Garden,” which my wife reads to her kindergarten students. We stayed at the Esmeralda about a month after the fire that nearly destroyed the church in 2019 and remember most the the constant crowds wanting to see the damage. Our room was small, but it was clean and the staff was quite helpful. Just remember that the building dates to the 1600s, so it’s going to be quirky. (Of course, that means no elevator.)
The Hôtel Lutetia on the Left Bank has beautiful Art Nouveau architecture and quite a history including occupation in WWII. James Joyce, Ernest Hemingway, etc

the Hotel d’Angleterre served as the Embassy of England when Franklin came to sign the Treaty of Paris. Franklin refused to enter because he viewed it as English territory. History on their website:
Hotel de Lutèce on Ile St Louis would be my choice based on what you say you’re looking for. Ile St Louis is the little island next to Notre Dame. It’s the most central area in Paris, and so easy to walk along the river to places you’ll want to see. The neighborhood is very charming, surrounded by the river and amazing views. Fun shops and good places to eat. Hotel de Lutèce is super charming and very nice.
Definitely Relais Bosquet! We just left this past weekend. Lovely hotel, great location to restaurants for late night coffee and deserts, and Cafe Roussillon. Easy access to bus and metro. Their breakfasts are very decent. They may also have a Rick Steves discount as he recommends them in his guide books. We noticed a lot of people staying there that were leaving for one of his tours. This will have been our sixth visit there.
