My daughter and I will be in Paris for 5 days. One of those days I wanted to take a train to Champagne area (Epernay is where I am thinking).
From Paris we are heading to Munich so would it be best to spend our last night in Epernay and then take the train from there to Munich since we will have headed that way?
If you suggest staying a night in Epernay, do you have suggestions? low cost, nothing fancy, just need clean and good location.

It's your choice. A quick look on the SNCF site shows an early morning train from Epernay that would first return to Paris before changing to an onward train. So theres no advantage in staying in Epernay for that one. The next train, an hour later, goes to Strasbourg before boarding the onward train. Looks like both require another change in Mannheim.

I don't think that it makes sense to spend a night in Epernay. It is not going to save you any time for your trip to Munich. I would just do a day trip to Epernay. It's super easy. I did one last October. Then take either the train from Gare de l'Est or a flight to get from Paris to Munich at the end of your five days.
