We would like to take a day trip from Paris via car rental or train to a medieval town for a day of walking, wine and cheese. Do you have any recommendations?

Thank you for the link. It is difficult to determine which ones have a good vineyard/tour/tasting - we prefer wines over champagne. Hoping that someone has been to any of them and can recommend.
Anything close to Paris is large wheat farm country, not wine country, so nothing in the referenced TA link fits for great local wine. You might want to check for excellent restaurants in Moret or Provins though, ones with good wine lists and cheese carts.
Apart from Champagne there is no wine area close enough to Paris to really work as a day trip, you're too far north. The Loire valley might be just about possible but the distance is pushing it.
Did a day trip to the Loire some years ago. Take the TGV to Tours in the morning, about a 2-hr trip, and then rent a car near the train station (I think we used Hertz). We drove around for about 4 hours in the Loire and went to (I think) 3 vineyards. We just pulled over whenever we saw a sign for tastings. Note this was wine, no champagne. We then drove back to Tours, had a bite to eat and took the evening train back to Paris.
It was a long-ish day but was good fun.
Do try to devote more than a day to this. If you don't have more time then just stay in Paris and explore more there.

Don't even think about having a drink then driving , the French are dead serious against any boozing and cruising
As mentioned, Senlis (http://mainelywinenews.blogspot.com/search?q=senlis) and Provins (http://mainelywinenews.blogspot.com/search?q=provins) are good choices. No wine there, though, unless you have lunch at a restaurant.

Beaune but you would want to spend 2 or 3 nights there. We drove up from Provence so I don't know abt train connections from Paris.
I can second Senlis...delightful little town, especially on market day.
I'd probably go with Reims. It's really convenient by train as a day trip. It has tours of big champagne houses and a great cathedral (13th century) in the center. The area has been devastated by war and rebuilt, however, so not the perfect medieval center of other destinations.
