We will be in Paris in mid-September staying in Le Marais not far from St. Paul Metro Station and plan on taking three day/part-day trips: Palace of Versailles on a Saturday, Chateaux Fontainebleau on Sunday and Paris Disney on Monday. We plan to arrive at each location shortly before the gates open and will be taking the Metro/RER trains as shown on various route planners. As I understand it, I will need to go to a ticket window at St. Paul Metro Station and ask the agent for tickets to my destinations and be given a ticket, or two for a round trip, and use that one ticket my entire journey transferring from Metro to RER as required. Is this correct and at Marnee-la-Vallée stop for Chateaux Fontainebleau will my ticket be valid on the No. 1 bus for the 20 minute ride to the Chateaux?

Yes, that's correct.
Some metro stations don't sell tickets anymore, in which case you'll have to use the machines. It's easy (English available) and some take cash.
Just a slight confusion: the stop for Fontainebleau is Fontainebleau-Avon, on the line from Gare de Lyon, and you need a separate ticket (t+, a standard Paris metro ticket) for the bus. One ticket each way.
Thanks Balso, so for the No. 1 Bus from Fontainebleau-Avon Station to the Chateaux, they accept the regular t+ tickets that I would use on the Metro or a city bus, correct?
Yes, the Fontainebleau town buses accept Paris T+ tickets.
