I'd recommend Les Vedettes du Pont Neuf for an evening Seine cruise. They leave from the Pont Neuf, other boats leave from near the Eiffel Tower and might be more convenient depending on where you'll be when. Rather than reserving and buying ahead, just show up and you should be OK. That way you can time your cruise for good weather. I'd recommend against a dinner cruise, because it divides your attention between the wonderful sights on both banks and the necessary focus on your plate of food (which most likely won't be that good anyway).
Can't help you with a "Paris in a Day" tour. There are several hop-on-hop-off bus lines that take you to the major sights and could give you an overview of the city, but if you get off at one stop you may have to wait a long time to get back on to continue the route. A better plan might be to use the "Explore Europe" link above, and a guidebook from the library, to decide what you want to see most, use a map to plan your own route, build in plenty of time for contingencies and strolling (a major Paris sport), and plan your own "Paris in a day."

If you want an overview of the city, don't use the HOHOs which take forever and involve endless waiting. Get a two hour foxity bus tour. And then go walk around an area that interests you.

I agree with Dick. The vedettes du Pont Neuf is a very good boat tour and reasonably priced. If you can do the tour at dusk it is beautiful to see the “City of Lights” all lit up.
