Mike
I don't know of any tours but if nothing comes up, you might want to consider a cheese tasting. There are lots in Paris -- one I can recommend is http://www.laffineuraffine.com/en/.
These people do gourmet walks and wine walks; if they don't do a cheese thing, they might be able to connect you with someone who does. The owner is an American ex pat now a French citizen and is great to work with.

ParisByMouth does excellent cheese tours. Very knowledgeable guides, substantial samples (included in price) and a discussion of the cheeses with wine at the end.

Shopping for cheese in Paris is a total delight. We found a cheese shop in Batignolles on our recent month long visit there that was exceptional not so much for the cheese (which was lovely) but for the proprietor who managed in helping us select cheese to convey the notion that he had at last discovered true devotees deserving of his cheeses. When I would ask for, say, a pecorino -- he would point out several and when I made a selection you could see that I had made the right choice -- the choice of people with excellent taste. He was utterly charming in projecting this aura of approval. He was a gem and made choosing cheese a lovely experience.
