Looking for a fun 3 day trip in beginning of May. Like to walk and explore cool sites, eat good food.

While a trip to the top of the Eiffel Tower is nice and a experience you'll remember, it is also (one of the) most striking features of the Paris skyline... and you can't see it if you're on it.
It you want a great view of the Eiffel Tower. Montparnasse Tower or the top of Arc de Triomphe provide views you won't get anywhere else.

The view of the Eiffel Tower from the Trocadero across the Seine River is amazing, especially at night when it is all lit up!

Are you actually in Paris on May 1? It's a national holiday and many things are closed.

Do you have 4 nights to give yourself 3 full days or are you arriving on day 1 and leaving on day 4?

Since you mention walking, you might consider doing walk with Paris Walks if something of interest is offered on your days in Paris.

You will be there when gardens will be lovely so I'd make sure to at least walk thru some of them on your way elsewhere?

For myself "fun" constitutes museum visits but that's not everyone's cup of tea! Are they of interest to you or would you rather skip?

Churches?

Art Nouveau architecture?

Where are you staying?
