I loved southern France. Nimes, Arles, Orange, and Vence and St-Paul de Vence, in the mountains above Nice. Plenty to do to fill your time. Visit the Pont du Gard, don't know if you can float down the river at this time of year, but even if you can't, it's worth a visit and you can walk inside one of the upper galleries.

There are so many things to do by bus or train from Nice. I stayed in Villefranche-sur-- Mer, 5 km from Nice. Train to one of the first towns in Italy, still on the French train line; the name escapes me now, but they have a Huge market on Friday I believe. Bus 100 takes you east. Eze via bus, Monaco by bus or train. Menton, bus or train. Grasse, Vence, train I believe. Spend part of a day in Villefrance, so lovely; eat mussels and frites for me please! Overlooking the water, so fabulous.

The town in Italy with the fabulous market is Ventimille or Ventimiglia (Italian).
It is well worth a visit. On your way back to Nice stop in Menton....just west of the Italian border (in France). It is one of our favourite places. With a train ticket you can hop on and off for the fare to Ventimille. Don't miss Villefranche, Antibes (another favourite) as well as the destinations listed in the other replies. We winter in Nice and cannot wait to get back there. Have fun!
