Landing at CDG at 2p and want to get halfway to Bordeaux to stay the night and next morning. It seems somewhere in the Loire region makes the most sense. Ideally, I'd love to get somewhere and have a cozy dinner, sleep, wake, get breakfast and then visit one winery as we leave Loire and head to Bordeaux.

I never recommend driving when jet lagged. Taking a Train to the station at St Pierre des Corps takes care of that issue. Then pick up the car from one of the rental companies outside the station and continue the next morning.
If you are flying in from a close-by country and won't experience jetlag, your plan is good. If you are coming off a redeye from North America, I agree with the above idea to take a train to Tours to sleep and get the car the next morning.
Or, just take the train to Bordeaux and pick up the car in Bordeaux.

I second the recommendation to take a train from the airport, unless you are coming in from a fairly local flight (Europe). There is a TGV from CDG to Bordeaux. I don't know how many each day or their departure times, but it is worth looking into. From Paris' Gare Montparnasse the train trip is just over two hours, so probably only an hour more from CDG. Since you arrive in the afternoon, I understand you wanting to layover somewhere. CJean's idea of Tours is good. My main advice is to buy any TGV tickets as soon as they are available as the cheaper tickets sell out fast. The longer you wait the pricier they are. (Same seats, just different prices.) You can pick up your car the next morning and wend your way to Bordeaux. The drive time will be 4-5 hours. That doesn't allow much time for gas/food/comfort stops, so add on a half-hour. If you decide to take the train to Bordeaux (It would be my choice), you could get there in about two hours on a TGV/inoui train. In Bordeaux a car will be useless, plus parking could be expensive, so I wouldn't pick up a car if just visiting the city. Do you plan on going anywhere else in that region? Both Bordeaux's train station and airport have lots of options for car rentals, with more generous open hours than in smaller towns.

If you plan to take the train from CDG to Bordeaux, the value of stopping somewhere along the way isn't apparent to me unless you stay long enough to take in the sights. Tours is a pleasant city, probably about right for a single day. Otherwise traveling nonstop all the way to Bordeaux would be more appealing to me.
