I can't find my set of Rick's videos, so I can't look this up. I seem to remember it being on the east side of Normandy. The eggs were beaten until extremely fluffy in a large copper bowl. Does anyone remember the name and location of this restaurant? Thanks!

The restaurant is La Mère Poulard, on Mont St Michel. It’s famous, and crazy expensive. A plain omelet, in 2001, was at least $30.
If I recall the price for plain omelette in 2018 was about 35 euros (or close to $40)

The Poulard group basically runs everything commercial on Mont-Saint-Michel proper. All but one hotel, and most of the restaurants. So they have a monopoly, and unfortunately their prices and service reflect that.
An omelette is the easiest thing to make in the world and you can get excellent omeletes in restaurants all over France. to pay this kind of ridiculous price is, well, ridiculous. We had a decent enough dinner at the hotel at the very top of the Mont and it was reasonably priced, but I'd starve before paying 40 Euros for a few eggs.
I agree janet. In 2001, three of us went into the white tablecloth dining room with very snooty waitresses, were seated and given menus. When we saw the prices we were shocked (yesss, we should have checked the menu first but never imagined a plain omelet could cost $30+). My friend was too embarrassed to get up and leave but i wasn’t. I said hell no, i am not paying these ridiculous, insulting prices and i got up and my friend and young son followed me out. The head waitress was very indignant but i could not have cared less. My attitude while walking out was the nerve of them!

We ate there about 10 years ago and found it to be very mediocre with a rude staff. We had the omelet (very plain) each and glass of wine each and there might have been a small salad. Bread never appeared and request for it was ignored. The tab came to over 100 euros.
I had one of the omelets when the RS tour I was on stayed on the Mont. It was part of the multi course dinner we enjoyed. Have no idea of the price as it was an included meal.
It is definitely a unique omelet. The fluffiness makes for an interesting mouth feel. It is served at a degree of doneness that many would call raw (other French omelets I have had were much more cooked). Glad I can say I had one. But, yeah, it's just eggs.
its more of a soufflé than an omelette, watching them making them is pure theatre, very skillfull ;-0
