My husband and I are planning to stay in Lyon for 6 days.
Which is preferable - staying in the old town or opting to stay in the new town?
Which is better in terms of seeing the sights and having access to restaurants?

I would stay between the Rhône and the Saône, on the Presqu'île, ideally around Place Bellecour or Hotel de Ville and never south of Perrache (the area is more isolated). This gives good access to the old town (walkable) and to anywhere else you might want to go.
I agree with Balso. It's very centrally located.
I stayed at the Mecure Beaux Arts.
Agree as to area between the rivers and easy access to tourist sites and old town. We love Lyon and both times, have stayed at Hotel Des Cellestins right by the Theatre. Their staff is wonderful and although somewhat small, rooms felt French and had antiques - we loved our stay.
