I've never been to this area, but as a movie buff I'm curious. Is your interest in Cherbourg from the classic The Umbrellas of Cherbourg, or something else?
And for any fans of the movie, the newly restored edition (available from Criterion in the US, Studio Canal in England, or Arte Video in France) is a must-see; it's far more beautiful than the versions previously available.
Just for general European travel I would pick fall. We have done May once and September/early October a number of times. Although the temperature is really a crap shoot any time of the year, we have found that the colors are better in the fall. Even if the spring is warm, the greenery will not be as well developed as after a full summer of growth.
I'd go in the fall so you can see the apple blossoms!
