It might help to know whether you will have a car.
Caen is a very short train ride from Bayeux and is much larger, so you might expand your search to that city.
La Rapiere, 53 rue St Jean in Bayeux is superb! Closed Sunday open Mondays for dinner only after May 10th. Bon appétit.
I've just been to Etretat and it was beautiful - if you happen to be there don't go to the big ones that are open but find a tiny one. normally the restaurants open at 7pm in the evening but it is totally worth it. especially now as there are not so many tourists
Le Pommier is open on Sunday and Monday. The food and service were both good.
I've also eaten at Le Pommier and can recommend it.

Those are probably slow nights. Caen is less touristy, and restaurant demand there probably doesn't drop off in March as much as it does in Bayeux. Maybe look at Trip Advisor and then check on whether any of TA's top-rated places in Caen will be open?
Some of our experienced (and French-speaking) posters have recommended the website LaFourchette for restaurant reviews. I don't read French, but the ratings are there for all to see.
Provincial restaurants typically close Sunday pm and maybe all of Monday. Some are more likely to be open in a touristic area such as Bayeux.
