Reverse of your other thread, Interlaken to Nice.
It is pretty straightforward to go via Ventimiglia, Milan, Brig (optional) & Spiez. I am not 100% sure you can complete this in a single day, though - you probably can, but I'd count on ~10 hours of train travel.
The other way around, via Lyon, isn't slower but is likely to be far more expensive.
Maybe try Flix bus from Nice to Chambery, Annecy, Geneva. Once in Geneva or Annecy you can get a train
Nice to Chambery by Flixbus is 10-15 hours depending on which bus and then it's several hours more to Interlaken.
Flixbus to Milan would be better, but slower than a direct train.
Balso has given a good route by train.
