We'd like any recommendations for a last night stay in Nice prior to our departure from there.

The airport is only about 20 minutes from the center of Nice, so there's no need for an airport hotel - just book a taxi if you have an early flight, or take the bus if you have a later one.

Most of the hotels near the airport are not that great, this is why if you actually have a night that includes dinner it's best to just stay in the center (as mentioned above). If you don't want to go all the way into the center, the Radisson Blu is newly refurbished, has a decent restaurant and a nice view. There is also a Novotel right near the airport, but the area immediately around has limited choices wrt to food and is a bit more industrial.
