My wife and i will actually be in Paris for New Year's Eve this year. We booked a dinner reservation at 7eme Vin. Its near the Eiffel Tower/Rue Cler area. We ate there last time we were in Paris and it was really good. Another restaurant I can't recommend enough is Le Coupe Chou - which is nearer the Latin Quarter. It has amazing atmosphere - and I see on their website - www.lecoupechou.com - that they are taking reservations for that night.
For our money - you can't go wrong with either of those. And yes - I fully realize there are alot more wonderful restaurants in Paris. But these two are amazine.

My husband and I got engaged five years ago on New Year's Eve in Paris and after he proposed, we headed up to the Sacre Coeur with many many other Parisians and were treated to a spectacular view and a festive environment. Very low key and inexpensive, but quite memorable for us.
