My husband and I are flying business class on Air France from Florence to San Francisco May 9, 2025.
We have a lay-over at CDG airport from 22:15 to 10:15 on May 10. We arrive at CDG at Terminal F and fly out the next morning from Terminal E. What are our options for that night in the CDG airport and for getting from Terminal F to Terminal E in the middle of the night.

Get a hotel I assume. There are hotels connected to the airport that you can walk to or close by that offer a shuttle each way (tends to be every 30 minutes if I recall).

I'd book an airport hotel. There are a bunch on the intra airport CDG VAL shuttle which circulates continuously. We usually stay at the Novotel at Roissypole on the CDG VAL. There is a Sheraton connected to Terminal 2 but it is pretty pricey. IN the morning you just hop on the CDG VAL to get to your terminal 3 hours before departure time.
You really don't have time to visit Paris coming in this late.

Stay at one of the airport hotels. The Sheraton is in terminal 2, the rest are available along the free rail line CDGVAL, just minutes from your checkin point:

As everyone has said, get a hotel on the CDGVAL circuit.
