I suggest that you pick up a guidebook to southern France (Rick has a good one) and read about the coastal towns and hill towns. Your own interests should guide your choices. There are places with gardens, places with art museums, places with beaches, places with markets, etc. Two and a half days is a very short time.
Your itinerary may also be affected by whether you are going to rent a car. You don't need a car for the coastal towns; the regional trains will be much easier and will eliminate parking difficulties and expenses. Some of the hill villages are accessible by bus, especially if you are staying in Nice, but it will not be easy to string together visits to more than two carefully selected towns in a single day if you are limited to traveling by bus.
MY Nice must-see was the Chagall Museum -- but that's because I try to see anything Chagall.
My must sees were Cocteau's chapel of Saint-Pierre At Villefranche, his Salle des mariages in Menton the Leger museum in Biot and the Picasso chapel in Vallauris.

To repeat, everyone has different likes and dislikes, especially when it comes to art. Many people are seeking differen things: the view down the Promenade from Castle Hill (le Chateau) in Nice, lunch in Eze looking down at the Med, the approach (and view) to Gourdon in the hills, the ferry to the monastery in St. Honorat, the walk around Cap Ferrat and the Villa Ephrussi, the Matisse Chapel in Vence, the train des Merveilles, the glitz of Monte Carlo, the narrow streets of St. Tropez in the offseason,... there are many experiences and sights for a variety of interests.
