Thank you for all the responses! There has already been so much great information. I was definitely vague in my post. We will be in Paris at the end of May. My wife and I and our 2 grown children. I would love to find 1 or 2 "experiences." or tours. Wine Tasting, Cheese tasting, fun outside activity. Also looking for a great restaurant to celebrate a birthday. To me there are no "must do's" just things that interest you! Do you like museums, churches, gardens, art nouveau, themed walks, WWII history?
Is your first day the day you arrive on a flight from the US? Jet lag can sometimes impact my activities that day.
Depends on where in the 7th you are staying for dinner recommendations. I enjoy Cafe Roussillon at the corner of Rue de Grenelle and Rue Cler and also di Felice just east of there on Rue de Grenelle. There is a restaurant in the neighborhood that has ties to Resistance activities in WWII although I've never eaten there.

What is your dream of Paris? Why are you going? Do that. The Rodin Museum would be about 50th on my list of must does in Paris -- but if you are a Rodin fan, go for it. If you have always dreamed of giant Monets, go to the Orangerie. Want to see where Proust is buried, head for Pere Lachaise. With so very little time, you have to decide what matters to you and do that.
I would plan two major things a day and then have a list of secondary things you might do in the area of each of these if there is time. Identify a couple of restaurants and make reservations. Give yourself some air.

Just telling us where you’re staying doesn’t tell us what your interests are. you want places to dine doesn’t tell us anything about what you’d like to eat, how much are willing to spend etc.

I am wondering which time of year you'll be visiting. Rodin Museum has a lovely garden especially in the spring or summer with a nice café. We have always enjoyed Les Antiquaires in the 7th. Make reservations, though. Do give us some more information, please. This group can be very helpful.
I enjoyed the Rodin museum, but only the actual sculptures outside. Can't go wrong at the Musee d'Orsay.
You could wander over to St Germain des Pres which is a great neighborhood.
Not exactly the special occasion restaurant, but this is one of my favorites in the 7th: Le 7ème Vin https://restaurant7emevin.fr/. Cozy bistro. Reservations suggested, as it’s fairly small.
A fun experience may simply be taking a picnic to the Trocadéro just before sunset to see the lights on the Eiffel Tower come on. In late May, the weather will likely be nice enough, though perhaps a little chilly.
I second the opinion of the poster who said to buy Rick Steve’s Paris book to help you streamline your itinerary to your interests. For me, a trip to Paris without a few hours at the Orsay would be criminal, but that’s just me.
I’ve never done an official wine or cheese tasting in Paris, but I’ve certainly enjoyed both in many restaurants!
