Would you recommend staying one night in this area to see the beauty, experience the lake and forge? I am unsure if 2 nights is too much and not alot to do in the area. Not sure what areas to visit near by.

What time of year are you going? If you want to spend some time relaxing and/or on the water, then a second night makes sense, but one night is enough to see the gorge.
We spent one night there. We arrived from St-Remy-de-Provence in the late afternoon and walked around. The next day we spent about 3-4 hours taking our time and driving along the gorge on our way to Nice. It was beautiful. I would have liked a second night there so that we could have gone down to the water to swim, picnic, maybe rent a pedal boat. Our hotel (Les Restanques du Moustier) had a pool, but we didn't have time to use it.

The roads are slow and the area is beautiful. 2 nights is definitely not too much! The gorge itself easily takes a full day if you explore both rims, and there are many interesting villages in the area including Moustiers itself, but also Tourtour, Bargeme and other further afield. You will not be bored, I can assure you!
