Montmartre, Marais & the Latin Quarter - Sunday or Monday?

My wife and I will be visiting Paris for 3 nights (2 1/2 days) at the end of the first week in June. Our arrival day is Saturday and we have a tentative plan for what we want to do on that afternoon and evening.

With one of the other two days (Sunday or Monday), we want to spend a good portion of the day exploring Montmartre, and with the alternate day, explore Le Marais, around our apartment, and perhaps over to the Latin Quarter to wander the old streets and take a stroll down the Rue Mouffetard.
Which of those two days would offer the best oppertunity to find shops, cafe's, landmarks and restaurants open for business in either area?
We've read several references to the fact that many businesses in Paris close on either or both of those days.

The Marais is absolutely packed on Sundays , especially along the rue des Francs-Bourgeois, precisely as it is one of the areas of Paris with the most shops.open on Sundays.

I just watched Jay Swanson's video tour of the Marais and he says, "Mondays in the Marais, stay away," because of how many places are closed that day (min 9:28).
