Montepellier - Suggestions?

I will be traveling to Montepellier next week for 6 days. We've rented an apartment in Castries along w/a car. Just wondering if anyone has any suggestions/ideas on places we "should" visit. We're thinking of taking a trip to Toulouse. Would appreciate any recommendations for wine bars/restaurants/vineyards that would be appropriate for two single women in their late 50's - we're not fearful just want to avoid looking like chaperones or being out of place. Hi. Will you have a car? I hope so. If so, here are some places I would visit. I have spent 5 weeks in the Languedoc area and love it. There is so much to see and do there that I wouldn't bother going to Toulouse.

Sete, nice seaside town close to Montpellier.
Gorge du L'Herault
Pezenas
Minerve
Carcassonne
Collioure
Nimes and Pont du Gard

You are well positioned to also visit Arles and La Camargue and other locales in Provence.

A good guidebook such as the Michelin Green Guide fpr Languedoc will give you a wealth of ideas.

I would add

St Guillaume le Desert
Abbaye de Valmagne - my favorite winery in Herault
Narbonne - cathedral
Beziers - cathedral
Pezenas (just to double the recommendation!)
Musée de l'Ephèbe et d'archéologie sous-marine in Agde - well-presented, small museum with ancient finds from the bottom of the sea in this area of France. Well worth visiting.

Only other comment...Toulouse is quite far from Montpellier and not really worth it IMHO!
