I realize that Viatour is a consolidator. Does anyone know what tour they actually sell under their brand for this trip?

I can't provide any info about the tour thing, but I did do a Google maps search and it takes almost 4 hours to drive between Paris and Mont St Michel. Rome2rio says it's about 5 hrs 20 min by train. I sure wouldn't want to spend 8+ hours on the road to do it in a day trip.
Have you considered spending the night somewhere nearby?
No. We are only in Paris for 2 days on our way home from Greece. We have been to Paris before.
We would not drive. The plan would be to take a TGV train to St. Mala and join a tour or join a tour in Paris that utilizes the TGV. Three hours by train is fine with us. Four hours by road, on a bus, nope.

By googling tours to the place of interest, I've usually been able to figure out who the provider is for a specific tour.
If you decide to do it yourself, I do not remember the route taking ~5 1/2 hours, as noted above. Paris to Rennes by train is about 2 hours 15 minutes. You then walk across a plaza to the bus station. If you time it right, the wait at the station is minimal. I'm not a huge fan of bus trips, but I remember this one went through some really lovely scenery. I'm not sure of the length of the bus trip (which is probably a good sign -- that means I was enjoying it), but I don't think it was much more than 1 to 1.5 hours.
MSM was a highlight of that trip and I encourage you to go, even though getting there takes some time.

I don't have experience going with a tour group to Normandy. Have you considered spending a couple days in the region? I highly recommend it. I spent 4 days in Normandy and visited Mont St Michel. It was such a memorable experience that I'd consider spending the night either on the island or near the island just to see it both day/night.
If time is limited, perhaps going with a tour group is the only option. However, just want to warn you that the tours usually take all day long.. from early morning all the way to late night. Most of the time spent would be on the bus covering distance. No matter how you get there, Mt St Michel is no doubt a must visit destination. Hope others can help with the tour question and enjoy!
I did that daytrip years and years ago and the train couldn't have taken that long or it wouldn't have worked. IIRC, we caught an early train, taxied to the Mont, then taxied back.
Since I remember nothing about the trip, I wouldn't recommend doing it that way. Find something closer to town that will allow more time at the destination.
