Hoping for recommendations for moderately priced lodging in the Champagne region. We are hoping for something in or near Epernay/Ay/Hautvillers or St. Amand sur Fion. If possible, we'd love a place at a smaller, family owned winery.

The best thing you can do is looking for a Chambre d'hôte / B&B. "Gîtes de France" is one of the largest organisations for B&B's and holiday rental homes in France. Between 50€ and 100€ you can find good value for the money lodging. Many places in the countryside. Besides this Google Maps is a good tool for finding lodging too.
