I will be staying in the 8th arrondissment. Friends are flying in to Paris for just 1 night and staying near the airport. Is there a city in between, easily reached by Metro or RER, where we could meet for dinner?

Why look for an in-between place? There are nice restaurants at most, if not all, the airport hotels, if you take the RER out there. Or there are many in the neighborhoods of Gare du Nord or Chatelet or St-Michel, if your friends want to come in on the RER and see a bit of the city. Either trip seems easier than trying to meet somewhere in between.
