Meandering through the Rhone valley this Fall

Appreciate this forum feature so much; this community is great!
We're a middle-aged couple of foodies and wine lovers with a week to get from Lyon to our departure city Nice this September and are looking for recommendations for smaller must-see villages and sights along the way. Any specific bistro and winery recommendations would be most appreciated!

The famous ones are Gordes, Roussilon and Lourmarin but I was not impressed. Avignon is a bigger place but fine city walls, historical pope's palace and the best restaurants in the entire area. L'isle Sorgue is interesting and quiet. Nimes is a cool place with Roman ruins and some good restaurants. Orange is worth a visit but really small. Uzes is small and nice. Antibes is the best place along the coast in my view, but Cassis has a nice beach and harbor. Toulon is a little rough but ok. Frejus is ok. I would skip Eze myself. Just a tourist trap. Of course Aix-en-Provence is a nice larger place.
