We will be in Paris on May 8, 2023. Can you please advise what will be open that day? Are museums, markets, stores, restaurants, etc. open? Thanks.

Museums close on their regular weekly closing day and for the most part on Jan 1, May 1 and Dec 25. No other holidays. The web site of each will indicate closing dates (and a few are open on even the big 3 holidays).
While workers get the day off on the obscure religious and historic holidays, I have not noticed it having any effect on shops and restaurants. And markets do not close for holidays. Market streets are normally closed from Sunday afternoon till Tuesday morning year round. Street markets run as scheduled year round.

8th May is a minor holiday. Most stores will be open as usual (except some small, independent stores that are typically closed on Sundays), as well as most restaurants - but it will pay to call ahead if you have a specific place in mind.
