We are doing the Eastern France tour this fall, ending near Marseille, France. We plan on spending the next week near Florence (Firenze), Italy.
We are thinking about renting a car at the airport in France, driving to Italy, then returning the car to France to avoid drop off fees, finally catching a plane back to Paris for the flight home to California. Would you recommend this as a good option? We want to have a car while we are in Italy to drive to Sienna, Cinque Terra, etc.

No it is too much driving; consider taking the train Nice to Genoa to Monterosso in Cinque Terre it goes along the coast pretty scenic then after your stay in Cinque Terre go rent the car in La Spezia to Florence to explore Tuscany. Fly back to Paris from Florence direct in 1hour 30 min instead of driving all the way back
