Although I am game to try a Bouchon or two, my companion isn't. Can anyone recommend restaurants in Lyon where we could get high quality food but where we wouldn't have to choose between brains or tripe?
Bouchons don't serve only what some might call "variety meats." They'll have more familiar food as well, so I'm confident your companion could find perfectly acceptable food at even the oldest bouchon.
As for your question about restaurant recommendations, what is your preferred budget range? Type of restaurant (formal Michelin-starred, nice but not so formal, or casual)?
Thanks for the reply - preferences run to the 'nice but not so formal' to 'casual' end of the spectrum. From RS France, I am considering Les Trouvailles or Cafe du Soleil. Budget is not really an issue... Good to know about the Bouchons. I read a number of online reviews of places like Le Garet and Chez Hugon and seemed, aside from Quenelles, that the offerings were primarily variety meats :>
I highly recommend Daniel et Denise (http://www.danieletdenise.fr/en/). Charming staff and delicious food that's a slightly lighter interpretation of classic Lyonnaise cooking. Not just offal as you can see from the menu. We liked this restaurant so much we went 2 nights in a row. Other Lyon highlights for us: L’Ebullition and Nardone Rene Glacier for ice cream.

I haven't heard of the restaurants you mentioned in your response to my question. There are hundreds (thousands?) of restaurants in Lyon responding to almost any preference in food, except (of course) for decent Mexican food (there are a few that come close, but they still fall short).
It looks as if your visit is imminent so perhaps you've settled on your preferred spots. If you have any other questions or need further recommendations, I'd be happy to help. I lived in Lyon for three years and visit there several times per year from my home in southern Bourgogne.
