Lyon Pit Stop

My wife and I will be driving from Carcassonne to Beaune on a Wednesday in Mid-October. We planned to picnic enroute. Would stopping for lunch in Lyon be more hassle than it's worth? If deemed doable, any recommendations for a noteworthy lunch that is also fairly easily accessible from/to the A7/A6. I know the food scene in Lyon is remarkable.

Far too complicated. It will add at least three hours to your trip

Charles,
Go to Viamnichelin.com for route options. They suggest 3 routes from Carcassonne to Beaune (two great places!). If you take the less interesting autoroute it will take just under 6 hours (but add in time for gas/comfort/meals) and cost you about 100 euros in tolls. If you want a more interesting route, one suggestion is a drive just under 9 hours (but you still need to add in gas, etc. times) It won't cost you for tolls, though. Check out their website. I find it very good for planning our drives in France, but always add one hour on short drives and two on longer drives to get gas, use the facilities, and eat.
You can see what towns are a long the routes that might suffice for a picnic or cafe lunch.

P.S.
Your shorter, more costly route does take you through Lyon. I just gravitate toward the more rural roads.
